The foundation of high-quality Japanese Matcha is shade-grown tea leaves. Several weeks prior to harvest, tea farmers cover the plants with canopies, reducing sunlight by 80–90%. This deliberate shading triggers big changes in the leaves:
Shade cultivation is labour-intensive. Farmers must erect and maintain canopy structures, monitor weather conditions, and carefully time the shading period. These additional steps raise production costs, but the result is leaves with smoother taste and greater depth of flavour, which standard sun-grown green teas cannot replicate.
This method also ensures that the tea maintains its nutritional profile, with higher levels of antioxidants and bioactive compounds that contribute to its celebrated health benefits.
